What Buying Less Actually Costs

Two packages of the same food can make two different claims.

The smaller one costs less.

The larger one costs less per ounce.

Both labels are telling the truth. Neither one knows what will happen after the food comes home.

That missing part matters more in a one-person household because the lower unit price often depends on one appetite continuing to use the food long enough for the larger package to earn its advantage. The bargain exists on the shelf. Whether it survives in the refrigerator is a different question.

Unit price is useful. It tells us what each ounce, pound, or item costs at the moment of purchase. It lets us compare quantities that would otherwise be difficult to judge.

But it measures the food bought, not the food used.

The break-even point the shelf label does not show

To compare a smaller and larger package honestly, it helps to ask a more practical question:

How much of the larger package must be used before it becomes cheaper than the smaller one?

That is not the same as asking whether every last ounce must be eaten. A larger package can still be the better value even when a little of it goes unused. The question is how much.

For this article, I reviewed four matched package pairs listed in Stop & Shop’s online catalog and used one matched Shaw’s comparison as a check. The prices were visible in July 2026. They are dated examples, not a national price study, and they may vary by store or change over time.

The calculation is simple. Take the total price of the larger package and divide it by the smaller package’s unit price. The result is the number of ounces from the larger package that must be used before its effective cost falls below the smaller package’s.

The answers were not the same for every food.

Spinach: the larger box wins only after most of it is used

In Stop & Shop’s online catalog, a 5-ounce package of Nature’s Promise organic baby spinach was listed at $4.09, or about 82 cents an ounce. The 11-ounce package was $6.39, or about 58 cents an ounce.

The larger package looks decisively cheaper by unit price.

But to make it the better value in actual use, about 7.8 ounces of the 11-ounce package would need to be eaten. That is roughly 71 percent of it. Up to about 3.2 ounces could go unused before the smaller package became the less expensive choice.

That is a more useful conclusion than either “always buy the small box” or “the large box is the bargain.”

For someone who uses spinach in several meals, the larger package may genuinely cost less. For someone buying it for one salad and perhaps a sandwich, the small package may cost less in total and create less food to account for later.

A Shaw’s comparison pointed in the same direction. A 5.5-ounce Dole baby spinach package was listed at $3.49, while a 10-ounce package was $4.99. The larger package became the better value only after about 7.9 ounces—nearly four-fifths of the package—were used.

The pattern was not that smaller packages are cheaper. It was that the larger package’s advantage depended on a fairly high level of use.

Mushrooms: a little waste is affordable, but not half the package

An 8-ounce package of Stop & Shop sliced white mushrooms was listed at $3.29. A 16-ounce package was $4.69.

The unit prices were about 41 cents and 29 cents an ounce.

The larger package became the better value after about 11.4 ounces were used. That meant roughly 4.6 ounces could remain unused before the smaller package would have cost less per ounce actually eaten.

This is where the phrase “food waste makes bulk buying expensive” becomes too blunt.

Some waste does not erase the bargain. In this example, more than a quarter of the larger package could go unused and the larger package would still match or beat the smaller one’s effective cost.

But half could not.

The distinction replaces a moral judgment with a practical one. The question is not whether every mushroom will be used perfectly. It is whether the likely use is closer to twelve ounces or closer to eight.

Yogurt: the tub is cheaper only if it becomes several real servings

A 5.3-ounce cup of Chobani nonfat plain Greek yogurt was listed at $1.89, about 36 cents an ounce. The matched 32-ounce tub was $8.19, about 26 cents an ounce.

The tub’s unit price was lower, but its total price was more than four times higher.

To beat the single cup on cost per ounce actually used, about 23 ounces of the tub had to be eaten. That is nearly three-quarters of the container.

This comparison is not only about spoilage. It is also about form.

The small cup is one defined serving. The tub asks the buyer to portion it, return to it, and want plain yogurt several more times. That may be easy for someone who eats it most mornings or uses it in cooking. It may be unrealistic for someone who wants yogurt only occasionally.

The larger package is not a bargain merely because it can be used. It becomes one when it is likely to be used.

Cheddar: the discount may be too small to justify buying twice as much

The Stop & Shop sharp cheddar comparison produced a different lesson.

An 8-ounce block was listed at $2.89, about 36 cents an ounce. The 16-ounce block was $5.29, about 33 cents an ounce.

The larger block was cheaper per ounce, but not by much.

A person would need to use about 14.6 ounces of the 16-ounce block for it to beat the smaller block’s effective cost. In other words, more than 91 percent of the larger package had to be used.

Only about 1.4 ounces could go unused before the smaller block became the better value.

That is the kind of comparison unit-price advice often misses. The larger package carries the appearance of a bargain, but the actual discount is so narrow that nearly all of it must be used.

Cheddar keeps longer than spinach or mushrooms, which may make that easy. The point is not that the larger block is a bad purchase. It is that its lower unit price leaves very little room for overestimating demand.

Sometimes the smaller choice is not offered

There is another problem the math cannot solve.

A true smaller equivalent may not exist.

In the online catalogs reviewed for this article, the common store-brand egg option appeared as a 12-count package. I did not find a consistently available six-count version of the same product. When a smaller carton appeared, it could differ by brand, production method, or price tier enough that the comparison stopped being about size alone.

That absence is part of the cost of buying for one.

The choice is not always between a fair small package and a discounted large one. Sometimes the shopper is asked to buy the standard household quantity or choose a premium alternative that changes the product as well as the package.

The shelf may provide a unit price without providing a true smaller option.

Preservation changes the answer—but only when it is real

Larger packages often remain sensible because food can be portioned, frozen, or stored well.

That matters most for foods such as meat, bread, grains, and some cheeses. A lower unit price can survive because the unused portion has a credible future.

But preservation is not free simply because it does not appear on the receipt.

It may require freezer space, containers, labeling, prompt attention, and a later meal the person will still want. Those costs do not need to be converted into cents to matter.

A larger package should receive credit for being easy to preserve. It should not receive imaginary credit for a plan that is unlikely to happen.

A better question at the shelf

Unit price remains worth reading.

The better habit is to place four questions beside it:

How much of the larger package must I use for it to win?

Can I realistically store or preserve the rest?

Will I want this food often enough?

Is the smaller form worth paying more for?

The answer will vary by food.

The larger spinach box may be a bargain for someone who uses most of it. The mushroom package can tolerate some waste, but not half. The yogurt tub needs to become several actual servings. The larger cheddar block offers so little unit-price advantage that nearly all of it must be used.

Buying less is not automatically economical.

Buying more is not automatically value.

The shelf label can tell you what the food costs by the ounce.

It cannot tell you how many of those ounces will become meals.
